Food safety in the healthcare environment

It goes without saying that food safety is an important issue facing us in modern times. The re-occurring challenges of maintaining a safe food environment in restaurants is a scenario commonly heard about, so it’s easy to imagine how imperative it is for a hospital. Food safety is (and should be) a priority in hospitals and healthcare facilities. Feeding vulnerable patients such as the elderly, young children, and immunocompromised individuals, that may be at a higher risk of developing a foodborne illness cannot be ignored. Food should not be the reason for otherwise preventable fatalities.

About the Presenters

Linda JacksonLinda Jackson, Director,  Food Focus SA

Linda has B. Sc. Chemistry (Wits) and an M. Tech – Environmental Health (Food safety) Central University of Technology. She has been involved in food safety for nearly three decades going back to when retail food safety audits started. She pioneered formal SAATCA registered training of food safety auditors and was a SAATCA board member. 


Linda has provided successful assistance to more than 30 organizations in quality and food safety systems and conducted numerous training courses on HACCP, FSSC 22000 and internal auditing. Linda is the co-founder of Food Focus, a company which aims to educate on the subject of food compliance, supporting everyone across the length of the food chain.

 

Erica ColsonErica Colson, EMEA Sector Propositions Manager, BSI

Erica’s background is in human psychology and the nature of culture. As EMEA Food Sector Propositions Manager for BSI, Erica has produced multiple seminars and conferences on sustainable food and packaging supply chains, food safety and quality and certification standard revisions. Erica has presented at trade conferences such as IFE, The International Food and Drink Event, The Food and Drink Quality and Safety Summit, The Food and Drink IT Summit, The Pulsus International Food Science Conference and the Farm Shop and Deli Show.

Danika holds a Bachelor of Commerce in Business Management and has gained over 10 years’ experience in compliance and certification working for international certification bodies. Danika has been working for BSI for the last three years where she has been managing key accounts and developing new business opportunities in both the food and healthcare sectors in South Africa. Danika has a passion for food safety and her experience together with industry related training has enabled her to confidently advise clients on best practice and the journey to certification.
